Episode 16: Urban Farming for Good with Chef DK of Haoma

It’s time to talk about food, the best topic of all.

The full lineups for Wonder Feasts and Wonder Kitchen at Wonderfruit 2019 have been announced, with a stellar cast of chefs and outlets from around Thailand. Wonderfruit’s food programming involves as much thought and planning as the other pillars like art and music, and we ensure that the chefs we partner with reflect creative, sustainable practises in their culinary pursuits.

In this episode of Wondercast, we took the opportunity to pull Chef Deepanker Khosla (known to those who know as DK) aside to talk about his circular food management process and how his Bangkok restaurant, Haoma, manages to create exquisite fine dining fare from his urban farm.

  • Permaculture is possible in an urban setting, with enough patience
  • Ancient farming practices are still relevant today
  • The future might be plant-based, but that doesn't mean that flavor needs to be sacrificed
  • Haoma's kitchen captures all its own food waste, creating compost for the farm and food for the fish
